Beer & Cheese Soup


Another dairy favorite…

2 (32 ounce) boxes pareve chicken broth

8 potatoes, peeled and chopped

1 onion, chopped

8 cups milk

½ cup soy sauce

2 teaspoons pepper

1-1/2 pounds Cheddar cheese, grated

2 cups beer

Dash paprika

In a large stock pot, bring the broth, potatoes and onion to a boil; reduce heat and simmer for ½ hour.  Remove from heat, cool slightly and add milk.  Using a hand immersion blender, purée the soup.  Stir in the soy sauce and pepper. Return pot to stove and bring soup to simmer over low heat.  Stir in cheese and keep stirring, constantly, until melted.  Add beer and sprinkle with paprika. Continue cooking just until heated through and serve.
