Spinach & Onion Couscous


This is a nice change from the usual sides.

1 onion, chopped

1 teaspoon minced fresh garlic

2 tablespoons olive oil

2 cups pareve chicken broth

1 (10-ounce) package frozen spinach, thawed and drained but not squeezed dry

1-1/2 cups couscous

2 tablespoons lemon juice

½ teaspoon salt

½ teaspoon pepper

Sauté onion and garlic in oil over medium-high heat in a large saucepan.  Add pareve chicken broth and spinach and bring to a boil.  Stir in couscous, cover and remove from heat. Let stand for 5 minutes – until liquid is absorbed.  Stir in lemon juice, salt and pepper. Fluff with a fork and serve immediately.
