Hash Brown Casserole

This is another one of those embarrassingly easy recipes that turns out to taste delicious.

1 (32 ounce) package frozen hash-brown potatoes

2 cups grated Cheddar cheese, divided

1 (10-3/4 ounce) can cream of mushroom soup

½ red pepper, chopped

½ cup sour cream
 
Preheat oven to 400 degrees.  Grease a 9 x 13-inch pan.  Mix together the potatoes, 1 cup Cheddar cheese, soup, pepper and sour cream and pour into prepared pan.  Top with remaining cheese and bake for 1 hour.
