Mexican Rice


1 small onion, chopped
3 tablespoons oil
1-1/2 cups uncooked converted white rice
1 cup chopped green pepper
1 teaspoon chili powder
1 cup tomato juice
½ cup ketchup
3 cups water
¼ cup chopped cilantro (optional)
In a large saucepan, sauté onion in oil.  Stir in rice, green pepper, chili powder, tomato juice, ketchup and water.  Bring to a boil; reduce heat and simmer, covered for 20 minutes or until rice is fully cooked.  Fluff rice with fork and garnish with cilantro, if desired.
