Banana Nut Bread

This is basic but good, the perfect use for those overripe bananas.

Ingredients
1 1/3 cup sugar
cup margarine or butter (if dairy)
2 eggs, beat well
2 or 3 bananas, mashed with fork
2 cups flour
1 teaspoon baking powder
1 teaspoon baking soda
teaspoon salt
cup nondairy creamer plus 1 tablespoon vinegar

cup chopped walnuts
1 teaspoon vanilla

Preparation
Cream together sugar and margarine. Add eggs, beat well, and then add bananas. Sift together the flour, baking powder, baking soda, and salt. Add to the banana mixture. Add the creamer and vanilla. Fold in the nuts. Grease and flour bread pan, or 9 x 4 inch pan. Pour the batter in the pan and let set out 10 minutes in pan before baking. Bake for 55 minutes in a 350 degree oven.
