Easy Sauerkraut & Turkey Casserole


This is almost a one dish meal.  It is easy and hearty and feeds a crowd.

2 pounds turkey stew cubes

1 onion, chopped

2 stalks celery, chopped

1 (16 ounce) can or jar sauerkraut, undrained

1 (10 ounce) package egg noodles, cooked and drained

1 (10-3/4 ounce) can mushroom soup

1/2 cup nondairy creamer

1 (4-1/2 ounce) can mushroom pieces

Salt and pepper to taste

Preheat oven to 350 degrees.  In a large skillet, brown turkey over medium heat.  Add the onions and celery and sauté briefly.  Stir in sauerkraut, noodles, soup, creamer and mushrooms.  Sprinkle with salt and pepper and spoon into greased 9 x 13-inch baking dish.  Cover and bake for 1-1/2 hours.
