Apple Bread


This is like apple pie in a quick bread.

½ cup margarine, softened

1 cup sugar

¼ cup nondairy creamer mixed with ¼ teaspoon vinegar

2 teaspoons baking powder

2 eggs

1 teaspoon vanilla

2 cups flour

2 cups shredded apple (peeled or not; it’s up to you – I can never be bothered!)

1 cup chopped nuts – walnuts or pecans

½ cup raisins (optional)

Topping:

¼ cup brown sugar

3 tablespoons flour

2 tablespoons margarine

1/3 cup chopped nuts (optional)

Preheat oven to 350 degrees.   Cream margarine and sugar until fluffy.  Beat in nondairy creamer, eggs and vanilla until well combined.  Stir in flour, then apples, nuts and raisins, if using.  Pour into greased 9 x 5-inch loaf pan.  For topping, combine brown sugar and flour in small bowl.  Cut in margarine with knife, pastry blender or your fingers until coarse crumbs form.  Stir in nuts, if using, and sprinkle over batter. Bake for 60 to 65 minutes.  Cool in pan for 10 minutes; remove to wire rack to finish cooling. Freezes well.
