Marinated Broiled Chicken


This recipe is a slight adaptation of a delicious grilled chicken we had at my friend Jyl’s.

½ cup olive oil

4 tablespoons brandy

3 tablespoons white wine vinegar

1 teaspoons minced fresh garlic

1 tablespoon Dijon mustard

1 teaspoon oregano

12 boneless, skinless chicken cutlets

Combine all ingredients except chicken in a jumbo-sized freezer Ziploc bag.  Add chicken and marinate for at least 4 hours.  Preheat broiler and broil for 10 to 15 minutes (about 5 to 7 minutes per side). Serve war, or at room temperature.
