Orzo with Red Onions, Mushrooms & Sun-Dried Tomatoes


This is great for Shabbos night or Shabbos day.  It is a flavor combination that really works.

1 (16 ounce) package orzo, cooked and drained
½ cup sun-dried tomatoes in olive oil
1 red onion, diced
1 (8 ounce) package sliced mushrooms

Sauté tomatoes, onion and mushrooms until onion is browned.  Add more olive to prevent burning.  Mix with orzo.  Refrigerate.  Serve warm or at room temperature.
