This is a nice Shabbos lunch option when you just cant face cholent
4 tablespoons olive oil
cup lime juice
2 teaspoons cumin
teaspoon pepper
4 boneless, skinless chicken breasts
1 cucumber, diced
1 yellow pepper, diced
cup chopped cilantro
1 cup orzo, cooked according to package directions and cooled
Whisk together 3 tablespoons of the olive oil, lime juice, 1 teaspoon cumin and pepper. Set aside. Sprinkle chicken breasts with remaining cumin and saut in 1 tablespoon olive oil over medium-high heat until cooked 8 to 10 minutes. Cool and cut into thin strips. Toss with dressing, then mix with vegetables and orzo.
